I LOVE berries. All the berries. True – not all berries are born equal, and I love some more, but they all are a wonderful creation.

Raspberry is one of those most favorite berries I love so much. It makes wonderful ice cream (and it’s SO simple to make), gorgeous candies (got a batch to my work and it vanished in a day!), cake decoration can’t be simpler when it comes to berries and so on!

So how do we make a candy with a fruit or berry that has so much water in it? Remember – water is the enemy of candies. They become soft and sticky if there is any water for the sugar to grab onto. We need to dehydrate those or buy them dehydrated. I just dehydrated my very own first batch of 100gr of raspberry. I got 13.5 grams of dehydrated raspberry and it’s been powdered in a coffee grinder with 13.5gr of white granular sugar to get to a very fine powder. You can buy yours dehydrated from online companies selling dehydrated organic fruits and vegetables. I first bought freeze dried Raspberry from iHerb.com:

But there are many other sellers online and on Amazon, Ebay and so on.

Bottom line – the making of this candy is super easy and well rewarding. I highly recommend you try this candy.
