Fresh Ginger Toffee

I love toffee – I just wish it wouldn’t take as long to make…

Still – it is worth the effort and extra time. It’s fun and it’s tasty.

Some things differ in a non commercial candy (at least from the candies we have here). The first is the flavor that instantly tells you that you are tasting a real fruit, herb or spice. The second is the texture – it’s a bit more sticky and stretches in your mouth in the beginning and then quickly turns into a soft mass, yet still elastic and fun. Last but not least is the long lasting behavior – as after several days to weeks the sugar in the candy will crystallize and the toffee will turn into taffy – a stiffer version of itself and less stretchy. Some herbs allow for a fast conversion to taffy, the best one – sadly – is ginger.
